Prego's head chef, Steve Robbins, has worked in three previous establishments with culinary legend Franco Taruschio, former owner of The Walnut Tree near Abergavenny, and that Prego itself now counts Franco as a consultant, and you have added in some serious pedigree to this new Monmouth eatery. "Prego is all about using quality locally sourced produce to create great flavours but with no over-the-top frills or overly complicated knick-knacks," explains Head Chef Steve Robbins. "The reason Franco wanted to get involved with Prego initially was to create a restaurant that produces food that is simple, whatever the season and to produce food that is usually only associated with Italian regions and to bring them to the Monmouthshire area". "We have a daily menu which changes on a weekily basis depending on what locally sourced seasonal produce is available". People can feel free to come in for a quick snack or indulge in a three course meal".

Monmouth has in around it some superb bed and breakfast accomodation and one or two really great hotels in the town. But it could always do with more places to stay for visitors and one of the great things about Prego is that as well as the restaurant the proprietors have built accomodation into the mix, which has been recently awarded 3 stars by the Welsh Tourist Board.
Prego has eight rooms, all with TV's, coffee and tea-making facilities, en-suite bathrooms, hairdriers etc and offers guests a pleasent lounge lit during the day by a lovely roof skylight. Located in the heart of Monmouth's old town Monmouth isn't exactly a metropolis-sized place so anywhere in the centre of town is not going to be far from places to eat, drink or sample the gorgeous countryside. Being located in Church Street, the pedestrianised center of the old part of Monmouth town does, though, make it a really great place to pitch up for the night. Free of a lot of traffic noise, it is also quiet and has ample public parking right outside the back door.
